Directions:

  1. Preheat the oven to 350 degrees F. Begin by making the Simple Mills Artisan Bread by following the “loaf” directions on the back of the box. Bake the bread as directed.
  2. While the bread is baking, prepare the french toast batter.
  3. Whisk together the eggs, smoothie, milk, and vanilla until well combined.
  4. Add the collagen and cinnamon to the mixture, and whisk until there are minimal clumps. The collagen may form a few small clumps – that’s okay! Just whisk quickly with a fork to dissolve the larger clumps. Set Aside.
  5. Next, prep the pumpkin dip. In a medium sized bowl, mix together the other smoothie pouch, yogurt, collagen, cinnamon, and vanilla until smooth. Cover the bowl with plastic wrap and place in the refrigerator while you make the french toast sticks.
  6. Once the bread is done baking, allow it to cool for 10 minutes.
  7. Next, slice the bread into 8-10 slices, depending on how thick you want the french toast to be.
  8. Slice each piece of bread again the long way (horizontally) to turn each slice of bread into two sticks.
  9. Heat a pan over medium heat and grease with butter.
  10. Dunk each piece of bread into the french toast batter until fully coated. Place the coated bread into the pan and let cook for ~4 minutes on each side, or until golden brown.
  11. Repeat step 10 until all of the bread is used up.
  12. Once the french toast sticks are cooked, you’re ready to eat! Either place a few spoonfuls of the pumpkin dip into a small glass and fill with french toast, or simply dunk the french toast sticks in a bowl of the dip. Enjoy!
